Cherry Madeira Cake

The Madeira Cake is a sponge cake in traditional English cooking. It is often served with tea. It has a firm yet light texture. It was first created in the 1800s with a rich, buttery texture. It is named after its island of creation, Madeira, Portugal.

Recipe

Here are the ingrediants for a basic Madeira cake

Ingrediants

  • 8oz/200g Self-Raising Flour
  • 6oz/150g Caster Sugar
  • 4oz/100g Margerine or Butter
  • 2 Eggs
  • 2 Tablespoons of Milk (more if required)

Optional Ingrediants

  • 1 Teaspoon Vanilla Essence
  • 150g Chocolate Chips (for Chocolate Chip Madeira Cake)
  • 150g Cherries (for Cherry Madeira Cake)
  • 200g Icing Sugar (for icing)
  • ?ml Water (for icing)
  • 150g Butter (for butter icing)
  • 1 teaspoon flavouring/ food colouring (for icing)

Equipment

  • An Oven
  • 1 Big Bowl
  • Electric Mixer with 1 or 2 whisks
  • Sieve
  • Cake Tin(s)
  • Various pieces of cutlary e.g knives, spoons etc.
  • Weighing Scales
  • Cooling Tray

Method

  1. Get all the ingrediants and equipment out. Preheat the oven to 180°C. Start by weighing out the flour and sieving it into the bowl. Next measure out the sugar and margerine and add to bowl.
  2. Add the 2 eggs.
  3. Plug in electric mixture and start mixing until the eggs have disappered. Now add the milk.
  4. Start mixing again. Keep mixing until there are no lumps or bumps and it is a yellowish, creamy texture.
  5. Divide the mixture equalily into the cake tin(s). Bake for about 15 to 20 minutes in the oven.
  6. After it is cooked, allow to cool on cooling tray.
  7. When cool, make icing mixture and ice the cake if you want. After this let it dry and dig in! YUM!
